Ingredients

  • 3 large eggs
  • 75 grams chorizo sausage
  • 1 cup fresh spinach
  • 2 tablespoons milk
  • 1 teaspoon olive oil
  • 1 teaspoon butter
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons cheddar cheese (shredded)
  • 1 teaspoon parsley (optional, chopped)

Directions

Step 1

Crack the eggs into a medium-sized bowl. Add the milk, salt, and black pepper. Whisk together until thoroughly combined and fluffy.

Step 2

Heat a non-stick skillet over medium heat. Add the olive oil and chorizo sausage. Cook the chorizo for 3-4 minutes, breaking it into small pieces until it is browned and cooked through.

Step 3

Add the fresh spinach to the skillet with the chorizo. Sauté for 1-2 minutes until the spinach is wilted. Remove the mixture from the skillet and set aside on a plate.

Step 4

Reduce the heat to low and return the skillet to the stove. Add the butter and swirl it around until melted to coat the bottom of the pan.

Step 5

Pour the egg mixture into the skillet, ensuring it evenly covers the surface. Let it cook undisturbed for about 1-2 minutes or until the edges start to set.

Step 6

Sprinkle the cooked chorizo, spinach mixture, and shredded cheddar cheese over one half of the omelet.

Step 7

Using a spatula, carefully fold the other half of the omelet over the filling. Cook for an additional 1-2 minutes until the cheese is melted and the eggs are fully set.

Step 8

Slide the omelet onto a plate, garnish with chopped parsley if desired, and serve immediately.
