Ingredients

  • 4 pieces Flour tortillas
  • 200 grams Chorizo sausage
  • 180 grams Manchego cheese, shredded
  • 1 small Red onion, finely diced
  • 2 tablespoons Fresh cilantro, chopped
  • 2 teaspoons Olive oil
  • 1 medium Avocado, sliced (optional)
  • 120 ml Sour cream (optional)
  • 1 large Lime, cut into wedges (optional)

Directions

Step 1

Heat a large skillet over medium heat. Add the chorizo sausage and cook for 5–7 minutes, breaking it apart with a wooden spoon until fully cooked and browned. Once cooked, transfer the chorizo to a plate lined with paper towels to drain excess grease.

Step 2

In the same skillet, add 1 teaspoon of olive oil and sauté the finely diced red onion for 2–3 minutes until softened. Turn off the heat and set the onions aside.

Step 3

Place one flour tortilla on a flat surface. Spread 45 grams of shredded Manchego cheese evenly over one half of the tortilla, followed by a portion of the cooked chorizo, sautéed onion, and a sprinkle of freshly chopped cilantro.

Step 4

Fold the tortilla in half to form a semicircle, pressing gently to seal the fillings inside. Repeat this process with the remaining tortillas and ingredients.

Step 5

Wipe out the skillet and heat the remaining teaspoon of olive oil over medium heat. Carefully place one folded quesadilla in the skillet and cook for 2–3 minutes per side, or until the tortilla is golden brown and the cheese has melted. Repeat with the remaining quesadillas.

Step 6

Remove the quesadillas from the skillet, transfer them to a cutting board, and allow them to rest for 1–2 minutes before slicing into wedges.

Step 7

Serve the quesadillas warm with optional avocado slices, a dollop of sour cream, and lime wedges on the side for squeezing over the top.
