Directions

Step 1

Heat a large skillet over medium heat. Remove the chorizo from its casing and add it to the skillet. Cook for 7-8 minutes or until fully browned, breaking it apart with a spatula as it cooks. Drain any excess fat if necessary, then set the chorizo aside in a bowl.

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
