  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 can (15 oz) fire-roasted diced tomatoes
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 1 tsp kosher salt
  • 0.5 tsp freshly ground black pepper
  • 0.25 cup fresh cilantro, chopped
  • 4 wedges lime wedges (for serving)

Directions

Step 1

In a large pot or Dutch oven, heat olive oil over medium-high heat.

Step 2

Add the chorizo sausage. Cook and break it apart with a wooden spoon until browned, about 5-7 minutes. Remove the cooked chorizo from the pot and set it aside on a plate.

Step 3

In the same pot, add the diced onion and red bell pepper. Sauté until softened, about 5 minutes.
