  • 2 teeth Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 2 cups Frozen mixed vegetables (peas, carrots, corn, etc.)
  • 4 stalks Green onions (sliced)
  • 2 large Eggs (beaten)
  • 1 cup Crispy chow mein noodles (optional, for topping)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish and set aside.

Step 2

Cook the rice according to package instructions, using 3 cups of chicken broth instead of water for added flavor. Once cooked, set aside to cool slightly.
