Ingredients

  • 4 pieces bone-in pork chops
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 3 pieces large apples (Granny Smith or Honeycrisp)
  • 3 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 0.5 cups chicken stock
  • 1 teaspoon fresh thyme

Directions

Step 1

Season the pork chops on both sides with salt, black pepper, cinnamon, and nutmeg. Set aside to let the flavors absorb while preparing the apples.

Step 2

Peel, core, and roughly chop the apples into 1-inch chunks. Set them aside.

Step 3

In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove them from the skillet and set aside.

Step 4

Reduce the heat to medium and add the unsalted butter to the same skillet. Once melted, stir in the brown sugar until it dissolves.

Step 5

Add the chopped apples to the skillet and cook for 5 minutes, stirring occasionally, until they start to soften and caramelize.

Step 6

Pour in the chicken stock and add the fresh thyme. Stir to combine.

Step 7

Return the seared pork chops to the skillet, nestling them among the apples. Cover and let everything simmer for 8-10 minutes, or until the pork chops are cooked through to an internal temperature of 145°F (63°C).

Step 8

Remove the skillet from heat and let the dish rest for 5 minutes. Plate the pork chops and spoon the chunky apples and sauce over the top.

Step 9

Serve warm and enjoy your Chops and Chunky Apples paired with your favorite side dish.
