Ingredients

  • 2 heads Romaine lettuce
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 large Carrot
  • 0.5 medium Red onion
  • 2 large Hard-boiled eggs
  • 0.5 cup Mayonnaise
  • 0.25 cup Ketchup
  • 2 tablespoons Sweet pickle relish
  • 1 teaspoon White vinegar
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash the romaine lettuce thoroughly under cold running water and pat dry with paper towels or a clean kitchen towel.

Step 2

Chop the romaine lettuce into bite-sized pieces and place in a large salad bowl.

Step 3

Halve the cherry tomatoes and add them to the salad bowl.

Step 4

Peel and dice the cucumber. Add it to the salad bowl.

Step 5

Peel the carrot and shred it using a box grater. Add the shredded carrot to the bowl.

Step 6

Thinly slice the red onion and add to the salad.

Step 7

Peel and slice the hard-boiled eggs, then arrange the slices over the top of the salad.

Step 8

In a small mixing bowl, whisk together the mayonnaise, ketchup, sweet pickle relish, white vinegar, sugar, salt, and black pepper until smooth and well combined. This is your Thousand Island dressing.

Step 9

Drizzle the Thousand Island dressing over the salad just before serving or serve it on the side in a small bowl.

Step 10

Toss the salad gently to combine the ingredients if desired, or serve with the dressing on top for an elegant presentation. Enjoy immediately!
