Ingredients

  • 1 pound ground beef (or ground turkey or pork)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 14.5 ounces diced tomatoes (canned, with juices)
  • 15 ounces black beans (canned, drained and rinsed)
  • 15 ounces kidney beans (canned, drained and rinsed)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup water or beef broth
  • 2 tablespoons fresh cilantro (optional, for garnish)
  • 1 lime wedges (optional, for serving)

Directions

Step 1

Heat a large skillet over medium-high heat. Add the olive oil, and once hot, add the diced onion. Sauté for 3-4 minutes until softened.

Step 2

Add the minced garlic to the skillet and cook for another 30 seconds until fragrant.

Step 3

Push the onions and garlic to the side of the skillet and add the ground meat. Cook, breaking it up with a spoon, until fully browned and no longer pink, about 6-8 minutes.

Step 4

Drain any excess fat from the skillet, if necessary.

Step 5

Stir in the diced tomatoes (with their juices), black beans, kidney beans, ground cumin, chili powder, paprika, salt, and black pepper. Mix everything together thoroughly.

Step 6

Pour in the water or beef broth and stir to combine. Reduce the heat to medium-low and let the mixture simmer for 10-15 minutes, stirring occasionally, until the flavors meld together.

Step 7

Taste and adjust seasonings as needed. Remove from heat.

Step 8

Garnish with chopped fresh cilantro, if desired, and serve with lime wedges on the side for an extra burst of freshness.
