Ingredients

  • 4 pieces Large eggs
  • 2 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 1.5 cups Milk
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Fresh parsley (optional, chopped)

Directions

Step 1

Place the eggs in a small saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, remove the pan from heat, cover, and let the eggs sit for 10 minutes.

Step 2

After the eggs have rested, drain the hot water and transfer the eggs to an ice bath to cool for 5 minutes. Peel the eggs once cooled and chop them into small pieces. Set aside.

Step 3

In a medium-sized saucepan, melt the butter over medium heat. Once melted, add the flour and whisk continuously to form a roux. Cook the roux for 1-2 minutes, being careful not to brown it.

Step 4

Gradually pour in the milk, whisking constantly to avoid lumps. Continue cooking and stirring until the sauce thickens, about 3-4 minutes.

Step 5

Season the sauce with salt and black pepper, adjusting to taste. Stir in the chopped boiled eggs and mix well to coat them evenly in the sauce.

Step 6

Optional: Garnish the sauce with freshly chopped parsley before serving.

Step 7

Serve warm over toast, rice, or your choice of accompaniment. Enjoy!
