  • 500 grams chicken livers
  • 60 grams unsalted butter
  • 1 medium yellow onion
  • 2 large hard-boiled eggs
  • 15 milliliters vegetable oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 10 grams fresh parsley
  • 15 milliliters brandy (optional)

Directions

Step 1

Rinse the chicken livers under cold water and pat dry with paper towels. Trim any visible fat or sinew, and set aside.

Step 2

Peel and finely chop the yellow onion.

Step 3

Heat the vegetable oil in a large skillet over medium heat. Add the chopped onion and sauté until softened and lightly golden, about 8-10 minutes.

Push the onions to one side of the skillet. Add the chicken livers to the other side and cook, flipping occasionally, until they are browned on the outside but still slightly pink inside, about 5-7 minutes.
