  • 250 grams boneless chicken breast or thigh
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 3 tablespoons vegetable oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 large carrots, sliced into thin strips
  • 150 grams green beans, cut into 2-inch pieces
  • 200 grams bok choy or Napa cabbage, chopped
  • 100 grams baby corn, halved
  • 1 cup water or chicken stock
  • 3 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 100 grams cashew nuts, toasted

Directions

Step 1

Slice the chicken into thin strips and marinate with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Set aside for 10 minutes.

Step 2

Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. Stir-fry the chicken for 3-4 minutes until cooked through. Remove from the pan and set aside.
