  • 1 cup Garbanzo beans (chickpeas, rinsed and drained)
  • 0.5 cup Kalamata olives (pitted and sliced)
  • 0.25 cup Fresh parsley (chopped)
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 5 tablespoons Extra virgin olive oil
  • 1 clove Garlic (minced)
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and thoroughly dry the romaine lettuce and radicchio. Chop both into bite-sized pieces and place them in a large salad bowl.
