Ingredients

  • 4 cups cooked navy beans (or canned, drained and rinsed)
  • 6 slices thick-cut bacon, chopped
  • 1 medium yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1 cup ketchup
  • 0.25 cup molasses
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 3 tablespoons brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon liquid smoke
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 cup water

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

In a large, oven-safe skillet or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the rendered fat in the pan.

Step 3

Add the diced onion to the pan with the bacon fat and sauté over medium heat until soft and translucent, about 5-7 minutes.

Step 4

Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

Step 5

Reduce the heat to low and add ketchup, molasses, apple cider vinegar, Dijon mustard, brown sugar, smoked paprika, chili powder, liquid smoke, salt, and black pepper to the skillet. Stir well to combine and let the sauce simmer for 5 minutes.

Step 6

Add the cooked navy beans to the sauce, gently folding them in to coat them evenly.

Step 7

Stir in the water and half of the cooked bacon, then bring everything to a gentle simmer.

Step 8

Cover the skillet or Dutch oven with a lid or aluminum foil and transfer to the preheated oven.

Step 9

Bake for 1 hour, then remove the lid, stir the beans, and bake uncovered for an additional 30-45 minutes, or until the sauce thickens and the beans are tender.

Step 10

Remove the beans from the oven, sprinkle the remaining bacon on top, and serve warm.
