Ingredients

  • 200 grams Crust option (graham crackers, digestive biscuits, or chocolate cookies)
  • 85 grams Unsalted butter, melted
  • 680 grams Cream cheese, softened
  • 200 grams Granulated sugar
  • 120 grams Sour cream
  • 1.5 teaspoons Vanilla extract
  • 3 pieces Eggs, large
  • 1 tablespoon All-purpose flour (optional for stability)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease a 9-inch (23 cm) springform pan and line the bottom with parchment paper.

Step 2

Prepare your crust: Crush your chosen crust option (graham crackers, digestive biscuits, or chocolate cookies) into fine crumbs using a food processor or by placing them in a sealed plastic bag and crushing them with a rolling pin.

Step 3

In a bowl, mix the cookie crumbs with melted butter until evenly combined and the mixture resembles damp sand.

Step 4

Press the crumb mixture firmly into the bottom of the prepared springform pan to create an even crust. Use the back of a spoon or the bottom of a glass for this. Bake the crust in the preheated oven for 10 minutes, then set aside to cool while you prepare the filling.

Step 5

In a large mixing bowl, beat the softened cream cheese and granulated sugar together using a hand mixer or stand mixer on medium speed until smooth and creamy (about 2 minutes).

Step 6

Add the sour cream and vanilla extract to the cream cheese mixture and beat until fully incorporated.

Step 7

Add the eggs, one at a time, beating on low speed after each addition. Be careful not to overmix—stop mixing as soon as the eggs are blended in.

Step 8

If desired, sift in the all-purpose flour and gently fold it into the batter for added stability.

Step 9

Pour the cheesecake filling into the prepared crust and smooth the top with a spatula.

Step 10

Bake the cheesecake in the preheated oven for 45–55 minutes. The edges should look set, but the center will still be slightly jiggly when gently shaken.

Step 11

Remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Run a knife around the edge to loosen it from the pan, then allow it to cool to room temperature before chilling in the refrigerator for at least 4 hours or overnight.

Step 12

Once chilled and set, carefully remove the springform pan ring. Slice and serve your creamy cheesecake with your favorite toppings, such as fresh berries, chocolate drizzle, or whipped cream.
