Ingredients

  • 1 cup all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter (softened)
  • 0.75 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons whole milk

Directions

Step 1

Preheat your oven to 325°F (165°C) and line two baking sheets with parchment paper.

Step 2

In a medium mixing bowl, sift together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the vanilla extract to the creamed butter and sugar mixture, and mix until combined.

Step 5

Gradually mix the dry ingredients into the wet ingredients, alternating with the milk. Mix just until the dough comes together. Avoid overmixing.

Step 6

Turn the dough out onto a piece of wax paper or plastic wrap, and shape it into a log approximately 2 inches in diameter. Wrap it tightly and refrigerate for at least 1 hour, or until firm.

Step 7

Once chilled, slice the dough into thin rounds, about 1/8 inch thick, using a sharp knife.

Step 8

Place the slices about 1 inch apart on the prepared baking sheets. They will spread slightly while baking.

Step 9

Bake in the preheated oven for 10-12 minutes, or until the edges are set and the wafers appear slightly crisp.

Step 10

Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Store the wafers in an airtight container at room temperature for up to one week. Enjoy as-is, or use them in desserts like icebox cakes!
