  • 200 grams dark chocolate (70% cocoa)
  • 150 grams unsalted butter
  • 150 grams granulated sugar
  • 3 large eggs
  • 2 egg yolks
  • 50 grams all-purpose flour
  • 1 tablespoon cocoa powder (for dusting ramekins)
  • 200 grams frozen or fresh raspberries
  • 40 grams powdered sugar
  • 1 tablespoon lemon juice

Directions

Step 1

Preheat your oven to 200°C (400°F) and grease four small ramekins with butter. Dust the inside with cocoa powder and tap out any excess.

Melt the dark chocolate and unsalted butter together in a heatproof bowl set over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

In a separate bowl, whisk the granulated sugar, large eggs, and egg yolks together until pale and frothy.

Slowly pour the melted chocolate mixture into the sugar and egg mixture, whisking constantly, until combined.
