Prepare a 20 cm (8-inch) springform pan by greasing the sides lightly or lining it with parchment paper to make removing the torte easier.
In a food processor, blend the chocolate sandwich cookies into fine crumbs. If you don’t have a food processor, place the cookies in a resealable plastic bag and crush them with a rolling pin until they turn into fine crumbs.
Transfer the cookie crumbs to a bowl and mix in the melted butter until evenly combined. The mixture should resemble damp sand.
Press the cookie mixture firmly into the bottom of the springform pan to form the crust. Use the bottom of a flat glass or measuring cup to create an even layer. Place the crust in the fridge while preparing the filling.
Chop the dark chocolate into small pieces and place it in a heatproof bowl.
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (don’t let it boil). Remove from heat and immediately pour the hot cream over the chopped chocolate.
Let the mixture sit for 2-3 minutes, then stir until the chocolate is completely melted and smooth. If the chocolate hasn’t melted completely, you can place the bowl over a pot of simmering water and stir gently until it’s smooth.
Sift the powdered sugar into the chocolate mixture and stir to combine. Add the vanilla extract and pinch of salt, and mix until smooth.
Pour the chocolate mixture onto the prepared crust, spreading it evenly with a spatula.
Cover the pan with plastic wrap or foil and refrigerate the torte for at least 4 hours, or until completely set. For best results, leave it overnight.
Once set, remove the torte from the springform pan and transfer it to a serving plate.
Optionally, garnish the torte with whipped cream, fresh berries, or chocolate shavings before serving.
Slice and serve chilled.
