Ingredients

  • 200 grams dark chocolate (60-70% cocoa)
  • 150 grams unsalted butter
  • 100 grams granulated sugar
  • 3 pieces large eggs
  • 3 pieces large egg yolks
  • 50 grams all-purpose flour
  • 10 grams unsweetened cocoa powder (for dusting molds)
  • 0 to taste optional powdered sugar or berries (for serving)

Directions

Step 1

Preheat your oven to 200°C (400°F). Grease 6 small ramekins or metal timbale molds with butter and dust them generously with unsweetened cocoa powder. Tap out the excess cocoa and place the molds on a baking tray.

Step 2

In a heatproof bowl, add the dark chocolate and butter. Melt them together over a bain-marie (a bowl set over a pot of gently simmering water), stirring occasionally until smooth. Remove from heat and allow to cool slightly.

In a separate large bowl, whisk the granulated sugar, eggs, and egg yolks together until the mixture is light and fluffy, about 2-3 minutes.

Slowly pour the melted chocolate and butter mixture into the egg mixture, stirring constantly to combine. Make sure the chocolate isn’t too hot to prevent scrambling the eggs.
