Ingredients

  • 1 large Russet potato, peeled and cubed
  • 2 tablespoons Unsalted butter
  • 0.5 cup Cocoa powder
  • 3 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 cup Chopped nuts (optional)
  • 0.25 cup Chocolate chips (optional, for topping)

Directions

Step 1

Peel and cube the russet potato, then place it in a medium saucepan. Cover the potato with water and bring it to a boil over medium-high heat.

Step 2

Cook the potato until fork-tender, approximately 10 minutes. Drain the water and transfer the cooked potato to a mixing bowl.

Step 3

Mash the potato thoroughly with a potato masher or fork until it’s very smooth with no lumps. Let it cool to room temperature.

Step 4

Add the unsalted butter to the mashed potato and stir until it is fully melted and incorporated.

Step 5

Mix in the cocoa powder and vanilla extract, stirring until well combined.

Step 6

Gradually sift the powdered sugar into the mixture, adding about 1 cup at a time. Stir thoroughly after each addition until smooth and fudge-like consistency is achieved.

Step 7

Add the salt and, if desired, fold in the chopped nuts for added texture.

Step 8

Line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal. Transfer the fudge mixture to the dish and spread it evenly using a spatula.

Step 9

Optional: Sprinkle chocolate chips over the top and gently press them into the fudge.

Step 10

Refrigerate the fudge for at least 2 hours, or until it sets and becomes firm.

Step 11

Once set, remove the fudge from the pan using the parchment paper as handles. Cut into 16 squares and serve.

Step 12

Store any leftovers in an airtight container in the refrigerator for up to 1 week.
