Ingredients

  • 200 grams All-purpose flour
  • 100 grams Unsalted butter
  • 50 grams Powdered sugar
  • 1 large Egg yolk
  • 1 tablespoon Cold water
  • 200 milliliters Heavy cream
  • 150 grams Dark chocolate (chopped)
  • 20 grams Butter (for filling)
  • 1 teaspoon Vanilla extract
  • 1 pinch Sea salt
  • 0 Optional toppings (e.g., fresh berries, whipped cream, or chocolate shavings)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

In a large mixing bowl, combine the all-purpose flour and powdered sugar.

Step 3

Add the cold butter (100 grams), cut into small cubes, to the dry ingredients. Use your fingers or a pastry cutter to rub the butter into the flour until the mixture resembles fine breadcrumbs.

Step 4

Add the egg yolk and cold water (1 tablespoon) to the flour mixture. Mix until the dough comes together. Avoid overworking the dough.

Step 5

Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 15-20 minutes to firm up.

Step 6

Once the dough is chilled, roll it out on a lightly floured surface to a thickness of about 3mm (1/8 inch).

Step 7

Cut out circles slightly larger than the tart tins and press them gently into the tins, trimming off any excess dough.

Step 8

Prick the base of each tart shell with a fork to prevent puffing, then line with parchment paper and fill with baking weights or dried beans.

Step 9

Bake the tart shells in the preheated oven for 12-15 minutes, or until golden. Let them cool completely before removing them from the tins.

Step 10

While the tart shells cool, prepare the chocolate filling. Heat the heavy cream (200 ml) in a saucepan over medium heat until it just begins to simmer. Do not allow it to boil.

Step 11

Immediately pour the hot cream over the chopped dark chocolate (150 grams) in a heatproof bowl. Let it sit for 2-3 minutes, then stir until smooth and glossy.

Step 12

Stir in the butter (20 grams), vanilla extract (1 teaspoon), and a pinch of sea salt until fully combined.

Step 13

Pour the chocolate mixture into the cooled tart shells, filling them to the brim. Smooth the tops with the back of a spoon if needed.

Step 14

Refrigerate the tarts for at least 1-2 hours, or until the chocolate filling sets.

Step 15

Before serving, garnish with optional toppings such as fresh berries, whipped cream, or chocolate shavings if desired.

Step 16

Serve chilled and enjoy your rich, indulgent chocolate tarts!
