Ingredients

  • 1 cup Granulated sugar
  • 0.5 cup Corn syrup
  • 0.25 cup Unsweetened cocoa powder
  • 0.75 cup Heavy cream
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Prepare a 9x9-inch baking dish by greasing it lightly with butter or nonstick spray. Set aside.

Step 2

In a medium-sized, heavy-bottomed saucepan, combine the granulated sugar, corn syrup, unsweetened cocoa powder, heavy cream, and salt. Stir until well mixed.

Step 3

Place the saucepan over medium heat and continue to stir until the sugar dissolves completely.

Step 4

Attach a candy thermometer to the side of the saucepan. Increase the heat slightly and allow the mixture to come to a boil, stirring occasionally to prevent sticking.

Step 5

Cook the mixture until it reaches 250°F (121°C) on the candy thermometer, also known as the hard-ball stage. This will take approximately 15-20 minutes.

Step 6

Once the desired temperature is reached, remove the saucepan from the heat. Stir in the unsalted butter and vanilla extract until fully incorporated.

Step 7

Pour the hot mixture into the prepared baking dish, spreading it evenly with a heat-resistant spatula. Let it cool slightly until it is warm but touch-safe, about 10-15 minutes.

Step 8

Once cooled enough to handle, butter your hands lightly to prevent sticking. Remove the taffy from the dish and begin to pull it. Stretch and fold the taffy repeatedly for about 5-7 minutes until it becomes glossy and firm.

Step 9

Roll the taffy into a long rope and cut it into bite-sized pieces using buttered scissors or a sharp knife.

Step 10

Wrap each taffy piece in wax paper to prevent sticking. Store in an airtight container at room temperature for up to 2 weeks.
