Ingredients

  • 2 tablespoons Ground flaxseed
  • 5 tablespoons Water
  • 1.25 cups All-purpose flour
  • 0.5 cups Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 0.75 cups Granulated sugar
  • 2 Large eggs
  • 0.5 cups Milk
  • 0.25 cups Vegetable oil
  • 1 teaspoon Pure vanilla extract
  • 0.5 cups Boiling water

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.

Step 2

In a small bowl, mix the ground flaxseed with 5 tablespoons of water. Let it sit for about 5 minutes to form a gel-like consistency (flax egg).

Step 3

In a medium-sized mixing bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Stir to combine and set aside.

Step 4

In a large mixing bowl, whisk together the granulated sugar, eggs, milk, vegetable oil, and vanilla extract until well combined.

Step 5

Stir the prepared flax egg into the wet ingredients mixture.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.

Step 7

Carefully stir in the boiling water. The batter will be thin, but this step ensures moist cupcakes.

Step 8

Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.

Step 9

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Step 10

Remove from the oven and allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely before frosting or serving.
