Ingredients

  • 200 grams raw unsalted sunflower seeds
  • 150 grams dark chocolate (70% cocoa or higher)
  • 1 teaspoon coconut oil
  • 1 teaspoon sea salt
  • 2 teaspoons powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.

Step 2

Spread the raw sunflower seeds evenly on the baking tray. Roast them in the oven for 8-10 minutes, stirring halfway through to ensure even toasting. Remove from the oven and let them cool completely.

Step 3

While the sunflower seeds are cooling, break the dark chocolate into small pieces and add it to a heatproof bowl along with the coconut oil.

Step 4

Melt the chocolate and coconut oil together using a double boiler or in the microwave. If using a microwave, heat in 20-second intervals, stirring well after each interval, until smooth and fully melted.

Transfer the roasted sunflower seeds into the bowl of melted chocolate, and stir until all the seeds are fully coated.

Line a new baking tray with clean parchment paper. Use a spoon to spread the chocolate-coated sunflower seeds in an even layer on the parchment.

Sprinkle the coated seeds lightly with sea salt while the chocolate is still wet. For a sweeter finish, sift powdered sugar over the top as an optional garnish.

Place the tray in the refrigerator for about 30 minutes, or until the chocolate is completely set.
