Ingredients

  • 200 g dark chocolate (70% cocoa solids)
  • 150 g unsalted butter
  • 150 g granulated sugar
  • 3 eggs
  • 1 egg yolk
  • 60 g all-purpose flour
  • 15 g unsweetened cocoa powder
  • 0.25 tsp salt
  • 250 g cherries (fresh or frozen, pitted)
  • 60 ml cognac
  • 2 tbsp honey
  • 1 tsp vanilla extract

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease a medium-sized baking dish or a 9-inch square pan.

Step 2

In a heatproof bowl, combine the dark chocolate and butter. Melt them together over a double boiler or in the microwave in 30-second intervals, stirring until smooth. Set aside to cool slightly.

Step 3

In a large mixing bowl, whisk together the granulated sugar, eggs, and egg yolk until the mixture is pale and airy, about 2-3 minutes.

Step 4

Gradually pour the melted chocolate and butter mixture into the egg mixture, folding gently with a spatula until fully combined.

Step 5

Sift in the flour, cocoa powder, and salt. Gently fold until there are no streaks of dry ingredients, being careful not to overmix.

Step 6

Pour the batter into the prepared baking dish and smooth the surface with the back of a spoon.

Step 7

Bake for 25-30 minutes, or until the edges are set but the center remains slightly gooey. The spoon cake should jiggle a little in the middle when you gently shake the pan.

Step 8

While the cake is baking, prepare the cognac cherries. Combine the pitted cherries, cognac, honey, and vanilla extract in a small saucepan. Cook over medium heat, stirring occasionally, until the cherries soften and the liquid thickens into a syrup, about 8-10 minutes.

Step 9

Once the cake is out of the oven, allow it to cool slightly for 10 minutes. Serve warm by scooping the cake with a spoon and topping it with a generous helping of cognac cherries.
