Ingredients

  • 1.75 cups all-purpose flour
  • 0.5 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons ground ginger
  • 0.25 teaspoons ground nutmeg
  • 0.5 teaspoons salt
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cups whole milk
  • 0.5 cups boiling water

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan or line it with parchment paper.

Step 2

In a medium mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, cream the sugar and butter together using an electric hand mixer or stand mixer until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs, one at a time, to the butter and sugar mixture, beating well after each addition. Stir in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.

Step 6

Carefully stir in the boiling water until the batter is smooth. The batter will be thin, but this is normal.

Step 7

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Step 10

Once cooled, you can dust the top with powdered sugar, frost with your favorite chocolate or cream cheese frosting, or simply enjoy as is!
