Ingredients

  • 200 grams Dark chocolate (70% cocoa)
  • 50 grams Unsalted butter
  • 3 large Egg yolks
  • 3 large Egg whites
  • 50 grams Granulated sugar
  • 150 milliliters Heavy cream
  • 2 tablespoons Dark rum
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Chop the dark chocolate into small pieces and place it in a heatproof bowl.

Step 2

Add the unsalted butter to the chocolate and melt them together over a simmering water bath (double boiler). Stir frequently until smooth and remove from heat to cool slightly.

Step 3

In a medium bowl, whisk the egg yolks with the granulated sugar until thick and pale. Stir in the vanilla extract and dark rum.

Step 4

Gradually fold the melted chocolate mixture into the egg yolk mixture until well combined.

In a separate clean, dry bowl, whip the egg whites with a pinch of salt until they form stiff peaks.
