Ingredients

  • 225 grams unsalted butter, softened
  • 200 grams granulated sugar
  • 100 grams light brown sugar, packed
  • 2 pieces large eggs
  • 2 teaspoons vanilla extract
  • 350 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoons salt
  • 150 grams chocolate chips, dark or semi-sweet
  • 50 milliliters heavy cream
  • 2 tablespoons unsweetened cocoa powder

Directions

Step 1

Preheat the oven to 175°C (350°F) and line a 9x9-inch square baking pan with parchment paper, allowing some overhang for easy removal.

Step 2

In a large mixing bowl, cream the softened butter, granulated sugar, and light brown sugar together until light and fluffy, about 2-3 minutes using an electric mixer.

Step 3

Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.

Step 4

In a separate bowl, whisk together the flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

Step 6

Set aside 150 grams of the cookie dough for the chocolate ripple layer. Press the remaining dough evenly into the prepared baking pan.

Step 7

In a small microwave-safe bowl, combine the chocolate chips and heavy cream. Heat in 20-second intervals, stirring between each, until the chocolate is melted and smooth.

Step 8

Stir the cocoa powder into the melted chocolate mixture until fully incorporated.

Step 9

Mix the reserved cookie dough with the chocolate mixture until a soft, chocolate-infused dough forms.

Step 10

Drop the chocolate dough in small dollops over the cookie base in the pan. Use a knife or skewer to swirl the chocolate mixture into the cookie dough, creating ripples.

Step 11

Bake in the preheated oven for 25-28 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean or with just a few moist crumbs.

Step 12

Allow the cookie squares to cool completely in the pan before lifting them out using the parchment overhang.

Step 13

Slice into 16 squares and serve. Enjoy!
