Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups unsweetened cocoa powder
  • 0.75 cups granulated sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 1 cups whole milk ricotta cheese
  • 0.5 cups milk
  • 0.25 cups vegetable oil
  • 2 whole large eggs
  • 1 teaspoons vanilla extract
  • 0.75 cups semi-sweet chocolate chips

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease the cups with cooking spray.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt. Set aside.

Step 3

In a separate medium-sized bowl, whisk together the ricotta cheese, milk, vegetable oil, eggs, and vanilla extract until smooth and well combined.

Step 4

Gradually pour the wet ingredients into the bowl of dry ingredients. Use a spatula or a wooden spoon to fold the mixture together until just combined. Be careful not to overmix, as this could result in dense muffins.

Step 5

Gently fold in the semi-sweet chocolate chips, reserving a small handful to sprinkle on top of the muffins if desired.

Step 6

Evenly divide the batter among the prepared muffin cups, filling each about 3/4 full. If desired, sprinkle the reserved chocolate chips over the tops of each muffin for extra chocolatey goodness.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with only a few moist crumbs.

Step 8

Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature and enjoy!
