Ingredients

  • 200 grams Dark chocolate (70% cocoa or higher)
  • 120 milliliters Heavy cream
  • 20 grams Unsalted butter
  • 100 grams Raisins
  • 30 milliliters Rum (optional, for soaking)
  • 50 grams Cocoa powder (unsweetened)

Directions

Step 1

If using rum, place the raisins in a small bowl and pour the rum over them. Let them soak for 30 minutes to 1 hour to absorb the flavor. If not using rum, skip this step.

Step 2

Finely chop the dark chocolate and place it in a heatproof bowl.

Step 3

In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.

Pour the hot cream over the chopped chocolate. Let it sit undisturbed for 2-3 minutes to allow the chocolate to melt.

Add the unsalted butter to the chocolate mixture and stir gently with a spatula or whisk until smooth and glossy.
