Ingredients

  • 120 grams All-purpose flour
  • 30 grams Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 80 grams Granulated sugar substitute (e.g., erythritol or monk fruit)
  • 180 milliliters Low-fat milk
  • 60 grams Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 240 milliliters Hot water
  • 2 tablespoons Unsweetened cocoa powder (for topping)
  • 50 grams Granulated sugar substitute (for topping)

Directions

Step 1

Preheat your oven to 175°C (350°F) and lightly grease an 8x8-inch baking dish.

Step 2

In a mixing bowl, whisk together the flour, 30 grams cocoa powder, baking powder, salt, and 80 grams sugar substitute until well combined.

Step 3

Add the milk, applesauce, and vanilla extract to the dry ingredients. Stir until you have a smooth batter with no lumps.

Step 4

Pour the batter into the prepared baking dish and spread it out evenly.

Step 5

In a small bowl, mix the 2 tablespoons cocoa powder and 50 grams sugar substitute for the topping. Sprinkle this mixture evenly over the batter in the dish.

Step 6

Carefully pour the hot water over the surface of the batter and topping. Do not stir; the water will help create the pudding layer as it bakes.

Step 7

Bake in the preheated oven for 25 minutes, or until the top is set but still slightly jiggly. The cake will be firm on top and have a gooey pudding layer underneath.

Step 8

Remove from the oven and let cool for about 10 minutes before serving. Serve warm with a dusting of additional cocoa powder or a dollop of light whipped cream, if desired.
