Ingredients

  • 4 tablespoons All-purpose flour
  • 3 tablespoons Granulated sugar
  • 3 tablespoons Unsweetened cocoa powder
  • 0.25 teaspoons Baking powder
  • 1 pinch Salt
  • 3 tablespoons Milk
  • 1.5 tablespoons Vegetable oil
  • 0.5 teaspoons Vanilla extract
  • 3 tablespoons Brown sugar
  • 4 tablespoons Hot water
  • 2 tablespoons Chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease two small ramekins or a small 5-6 inch baking dish.

Step 2

In a medium bowl, whisk together the all-purpose flour, granulated sugar, 1.5 tablespoons of the cocoa powder, baking powder, and salt.

Step 3

Add the milk, vegetable oil, and vanilla extract to the dry ingredients. Stir until the batter is smooth and well combined.

Step 4

Evenly divide the batter between the two ramekins, or pour it into the single baking dish. Sprinkle the brown sugar and remaining 1.5 tablespoons of cocoa powder evenly over the top of the batter.

Step 5

Carefully pour the hot water over the brown sugar and cocoa layer. Do not stir; the water will sit on top and create the pudding layer as it bakes.

Step 6

Sprinkle chocolate chips over the top, if using.

Step 7

Bake in the preheated oven for 20-22 minutes, or until the top looks set and slightly firm, but the cake jiggles slightly when tapped.

Step 8

Remove from the oven and let the pudding cake cool for 5 minutes. It will be very hot, so handle with care.

Step 9

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired. Enjoy your Chocolate Pudding Cake for 2!
