Ingredients

  • 200 grams Dark chocolate
  • 150 grams Hazelnuts
  • 200 grams Granulated sugar
  • 50 ml Heavy cream
  • 30 grams Unsalted butter
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Preheat your oven to 180°C (350°F). Spread the hazelnuts on a baking sheet and roast them for 10 minutes, or until the skins start to crack and peel.

Step 2

Remove the hazelnuts from the oven and allow them to cool slightly. Rub them in a clean kitchen towel to remove as much of the skin as possible, then roughly chop them and set aside.

In a heavy-bottomed saucepan over medium heat, combine the granulated sugar and a splash of water. Stir gently until the sugar dissolves, then increase the heat and leave the mixture to boil without stirring until it turns a golden caramel color.
