Ingredients

  • 1 cup All-purpose flour
  • 2 tablespoons Cocoa powder
  • 2 tablespoons Sugar
  • 1 teaspoon Baking powder
  • 0.75 cup Milk
  • 1 Egg
  • 1 tablespoon Unsalted butter (melted)
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Vegetable oil or butter (for greasing a pan)
  • 0 Powdered sugar or syrup (optional, for serving)

Directions

Step 1

In a medium mixing bowl, sift the all-purpose flour, cocoa powder, sugar, and baking powder. Whisk together until evenly combined.

Step 2

In a separate bowl, lightly beat the egg and mix in the milk, melted butter, and vanilla extract.

Step 3

Gradually add the wet ingredients into the dry ingredients, whisking until you have a smooth, lump-free batter. Be careful not to overmix.

Step 4

Preheat a non-stick frying pan or skillet over medium heat and lightly grease it with vegetable oil or butter.

Step 5

Once the pan is hot, drop tablespoon-sized portions of the batter onto the pan, leaving space between each pikelet to allow them to spread slightly.

Step 6

Cook for 1 to 2 minutes, or until small bubbles form on the surface of the pikelet and the edges look set. Carefully flip with a spatula and cook the other side for another 1 to 2 minutes until lightly browned.

Step 7

Remove the pikelets from the pan and place them on a plate lined with a clean kitchen towel to keep them warm. Repeat with the remaining batter, greasing the pan as necessary.

Step 8

Serve warm with a dusting of powdered sugar or a drizzle of syrup, if desired. Enjoy!
