  • 300 g Chocolate sandwich cookies
  • 100 g Unsalted butter
  • 225 g Cream cheese
  • 150 g Peanut butter (smooth)
  • 100 g Powdered sugar
  • 480 ml Heavy cream
  • 200 g Dark chocolate
  • 1 tsp Vanilla extract
  • 50 g Salted peanuts (roughly chopped)

Directions

Step 1

Prepare the crust: Crush the chocolate sandwich cookies into fine crumbs using a food processor or by placing them in a zip-top bag and crushing with a rolling pin.

Step 2

Melt the unsalted butter in a small saucepan or microwave-safe bowl, then mix it into the cookie crumbs until evenly combined.

Press the cookie mixture firmly and evenly into the bottom and slightly up the sides of a 9-inch (23 cm) springform pan. Place in the refrigerator to set.

Make the peanut filling: Beat together the cream cheese, smooth peanut butter, and powdered sugar in a mixing bowl until smooth and creamy.
