Ingredients

  • 1 cup peanut butter (creamy, unsweetened)
  • 1 scoop protein powder (chocolate flavor)
  • 1 cup rolled oats
  • 2 tablespoons cocoa powder
  • 0.333 cup maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking powder
  • 0.333 cup dark chocolate chips
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine peanut butter, maple syrup, egg, and vanilla extract. Whisk together until smooth and well combined.

Step 3

Add the protein powder, rolled oats, cocoa powder, baking powder, and salt to the wet ingredients. Mix until a thick dough forms.

Step 4

Fold in the dark chocolate chips, ensuring they are evenly distributed throughout the dough.

Step 5

Using a tablespoon or small cookie scoop, portion out the dough into 12 evenly sized balls. Place them on the prepared baking sheet, leaving about 2 inches of space between each cookie.

Step 6

Gently flatten each cookie with the back of a spoon or your fingers to your desired thickness, as these cookies won't spread much during baking.

Step 7

Bake in the preheated oven for 8–10 minutes, or until the edges are set. Be careful not to overbake; the cookies will firm up as they cool.

Step 8

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve and enjoy! Store leftover cookies in an airtight container at room temperature for up to 5 days, or in the refrigerator for a longer shelf life.
