Ingredients

  • 1 cup Creamy peanut butter
  • 1 cup Unsalted butter, softened
  • 2 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1.5 cups Semi-sweet chocolate chips
  • 0.5 cup Heavy cream
  • 0.25 teaspoon Salt

Directions

Step 1

In a large mixing bowl, combine the creamy peanut butter and softened unsalted butter. Use a hand or stand mixer to blend until smooth and creamy.

Step 2

Gradually add powdered sugar, about 1/2 cup at a time, while continuing to mix on low speed. Once all the powdered sugar is incorporated, add the vanilla extract and salt. Mix until the filling is smooth.

Step 3

Transfer the peanut butter mixture to a sheet of parchment paper. Shape the mixture into a log about 10-12 inches long and 2-3 inches in diameter. Roll the log tightly in the parchment paper and refrigerate for at least 1 hour, or until firm.

Step 4

In a heatproof bowl, combine the semi-sweet chocolate chips and heavy cream. Microwave in 20-second intervals, stirring between each, until the chocolate is completely melted and the mixture is smooth.

Step 5

Remove the peanut butter log from the refrigerator and unwrap it from the parchment paper. Place it on a wire rack set over a baking sheet lined with parchment paper.

Step 6

Carefully pour the melted chocolate mixture over the peanut butter log, ensuring it is fully coated on all sides. Use a spatula to smooth out the chocolate if needed.

Step 7

Place the coated log in the refrigerator for 30-60 minutes, or until the chocolate has set and hardened.

Step 8

Once the chocolate is set, transfer the log to a serving platter. Slice into pieces and serve immediately, or store in an airtight container in the refrigerator for up to 5 days.
