Ingredients

  • 2 cups All-purpose flour
  • 2 cups Granulated sugar
  • 0.75 cup Cocoa powder (unsweetened)
  • 1.5 teaspoons Baking powder
  • 1.5 teaspoons Baking soda
  • 1 teaspoon Salt
  • 2 large Eggs
  • 1 cup Whole milk
  • 0.5 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water
  • 1 cup Unsalted butter (softened)
  • 0.5 cup Peanut butter (creamy)
  • 4 cups Powdered sugar
  • 4 tablespoons Heavy cream
  • 1.5 cups Miniature peanut butter cups (roughly chopped)
  • 1 cup Semi-sweet chocolate chips
  • 0.5 cup Heavy cream (for ganache)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch sheet pan or line it with parchment paper.

Step 2

In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Stir until well combined.

Step 4

Slowly stir in the boiling water. The batter will be thin, but that’s normal.

Step 5

Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Step 6

Let the cake cool completely in the pan on a wire rack.

Step 7

While the cake cools, make the peanut butter frosting. In a large bowl, beat the softened butter and peanut butter until creamy and smooth.

Step 8

Gradually add the powdered sugar, one cup at a time, alternating with the heavy cream until the frosting reaches your desired consistency. Beat until fluffy.

Step 9

Once the cake is completely cooled, spread the peanut butter frosting evenly over the top.

Step 10

Sprinkle the chopped peanut butter cups generously over the frosted cake.

Step 11

To make the ganache, heat the heavy cream in a small saucepan over medium heat until it starts to simmer.

Step 12

Remove from heat and pour over the chocolate chips in a heatproof bowl. Let sit for 2-3 minutes, then stir until smooth and glossy.

Step 13

Drizzle the ganache over the cake, allowing it to drip down the sides if desired.

Step 14

Let the ganache set for about 10-15 minutes before slicing and serving.
