Directions

Step 1

Chop the dark chocolate into small pieces and place them in a heatproof bowl.

Step 2

In a small saucepan, heat 120 ml (half) of the heavy cream over medium heat until it just begins to simmer. Do not let it boil.

Pour the hot cream over the chopped chocolate. Let it sit for 1-2 minutes to allow the chocolate to melt, then whisk until smooth and glossy. Set aside to cool slightly.
