Ingredients

  • 24 pieces Chocolate sandwich cookies (such as Oreos)
  • 6 tablespoons Unsalted butter, melted
  • 8 ounces Cream cheese, softened
  • 1 cup Powdered sugar
  • 1 cup Creamy peanut butter
  • 2 cups Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 cup Semi-sweet chocolate chips
  • 4 pieces Peanut butter cups, chopped (optional garnish)
  • 2 tablespoons Chopped peanuts (optional garnish)

Directions

Step 1

Place the chocolate sandwich cookies in a food processor and pulse until they are fine crumbs.

Step 2

In a mixing bowl, combine the cookie crumbs with the melted butter and stir until the mixture is evenly moistened.

Step 3

Press the crumb mixture into the bottom and up the sides of a 9-inch pie dish to form the crust. Chill in the freezer for 10 minutes to firm up.

Step 4

In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.

Step 5

Add the peanut butter to the cream cheese mixture and beat until well combined.

Step 6

In a separate bowl, whip 1 cup of heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until smooth.

Step 7

Spread the peanut butter filling evenly over the chilled crust. Place the pie in the refrigerator to set for at least 2 hours.

Step 8

In a microwave-safe bowl, combine the remaining 1 cup of heavy cream and chocolate chips. Microwave in 20-second intervals, stirring after each, until the chocolate is fully melted and the mixture is smooth.

Step 9

Allow the chocolate ganache to cool slightly, then pour it over the top of the chilled peanut butter layer, spreading evenly. Refrigerate until the ganache is set, about 30 minutes.

Step 10

Optionally, garnish the top of the pie with chopped peanut butter cups and chopped peanuts before serving.
