Ingredients

  • 250 grams Dark chocolate (70% cocoa)
  • 125 grams Unsalted butter
  • 100 grams Caster sugar
  • 3 large Eggs
  • 200 milliliters Heavy cream
  • 1 tablespoon Orange zest (finely grated)
  • 2 tablespoons Cocoa powder (unsweetened, for dusting)
  • 0 optional Orange slices or candied orange peel (for garnish)

Directions

Step 1

Prepare a loaf pan by lining it with plastic wrap or parchment paper, leaving enough overhang on the edges to cover the marquise later.

Step 2

Melt the dark chocolate and butter together in a heatproof bowl set over a pot of simmering water, stirring occasionally until smooth. Remove from heat and let it cool slightly.

Step 3

In a separate heatproof bowl, whisk together caster sugar and eggs. Place the bowl over the pot of simmering water (make sure the bowl does not touch the water) and whisk continuously for about 5–7 minutes until the mixture becomes thick, pale, and increases in volume. Remove from heat.
