Prepare a loaf pan by lining it with plastic wrap or parchment paper, leaving enough overhang on the edges to cover the marquise later.
Melt the dark chocolate and butter together in a heatproof bowl set over a pot of simmering water, stirring occasionally until smooth. Remove from heat and let it cool slightly.
In a separate heatproof bowl, whisk together caster sugar and eggs. Place the bowl over the pot of simmering water (make sure the bowl does not touch the water) and whisk continuously for about 5–7 minutes until the mixture becomes thick, pale, and increases in volume. Remove from heat.
Gently fold the melted chocolate mixture into the egg mixture until fully combined.
In a medium-sized bowl, whip the heavy cream until soft peaks form. Fold in the orange zest.
Carefully fold the whipped cream mixture into the chocolate mixture in three additions, making sure to keep the mixture light and airy.
Pour the marquise mixture into the prepared loaf pan, smoothing the surface with a spatula. Cover the top with the overhanging plastic wrap or parchment paper.
Refrigerate for at least 6 hours, or preferably overnight, to allow the marquise to set fully.
When ready to serve, remove the marquise from the pan by lifting the overhanging wrap or paper. Dust the top with cocoa powder using a fine sieve.
Slice the marquise with a sharp knife (run it under warm water and dry for clean slices) and garnish with orange slices or candied orange peel. Serve immediately and enjoy!
