Ingredients

  • 20 pieces Oreo cookies
  • 5 tablespoons Unsalted butter
  • 16 ounces Cream cheese
  • 0.75 cups Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Orange zest
  • 2 tablespoons Fresh orange juice
  • 4 ounces Bittersweet chocolate
  • 2 tablespoons Heavy cream

Directions

Step 1

Preheat your oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

Step 2

Place the Oreo cookies in a food processor and pulse until finely crushed. Transfer to a bowl and stir in melted butter until the crumbs are evenly coated.

Step 3

Press the cookie mixture firmly and evenly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then let cool slightly.

Step 4

In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy using a hand or stand mixer on medium speed.

Step 5

Add eggs one at a time, beating well after each addition. Mix in the vanilla extract, orange zest, and orange juice until fully incorporated.

Step 6

Pour the cheesecake batter over the prepared crust, spreading it evenly with a spatula.

Step 7

Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the bars cool in the oven with the door slightly ajar for 15 minutes.

Step 8

Remove the pan from the oven and let the bars cool to room temperature. Then refrigerate for at least 4 hours or overnight to set completely.

Step 9

Once the bars are chilled, prepare the chocolate topping by melting the bittersweet chocolate with the heavy cream in a microwave-safe bowl in 20-second increments, stirring in between until smooth.

Step 10

Spread the melted chocolate evenly over the chilled cheesecake layer. Allow it to set for 30 minutes in the refrigerator.

Step 11

Lift the cheesecake out of the pan using the parchment overhang, and cut into 12 bars using a sharp knife. Clean the knife between cuts for neat edges.

Step 12

Serve chilled and enjoy your Chocolate Orange Cheesecake Bars!
