Ingredients

  • 200 grams Sugar
  • 100 grams Honey
  • 80 ml Water
  • 1 large Egg white
  • 1 teaspoon Vanilla extract
  • 150 grams Dark chocolate, chopped
  • 2 tablespoons Cocoa powder
  • 100 grams Roasted almonds, chopped
  • 100 grams Roasted hazelnuts, chopped
  • 10 grams Butter, for greasing

Directions

Step 1

Line a 9x13 inch baking pan with parchment paper and lightly grease it with butter.

Step 2

In a small saucepan, combine the sugar, honey, and water. Heat over medium heat while stirring until the sugar dissolves.

Step 3

Insert a candy thermometer into the pan and bring the mixture to a boil without stirring further. Allow it to reach 150°C (302°F).

Step 4

Meanwhile, in a separate mixing bowl, whisk the egg white until soft peaks form.

Step 5

Once the sugar mixture reaches the desired temperature, carefully pour it into the whipped egg white, while continuously whisking at a low speed. Gradually increase to medium speed, and continue whisking until it thickens.

When the mixture becomes glossy and thick, add the vanilla extract, cocoa powder, and melted dark chocolate. Continue to mix until well blended.

Fold in the chopped roasted almonds and hazelnuts using a spatula.

Quickly transfer the nougat mixture into the prepared baking pan. Smooth the top with a spatula.

Let the nougat cool at room temperature for about 3 hours, or until it firms up.
