  • 30 grams powdered sugar

  • 20 grams dark chocolate (for garnish, optional)
  • 6 leaves fresh mint leaves (for garnish, optional)

Directions

Step 1

Chop the dark chocolate into small pieces and melt it gently over a double boiler or in the microwave in 20-second intervals, stirring until smooth. Set aside to cool slightly.

Step 2

In a large mixing bowl, whip the heavy cream until soft peaks form. Reserve 100 ml of the whipped cream for garnishing, and refrigerate it until ready to use.

In a separate clean bowl, whisk the egg whites until they become frothy. Gradually add caster sugar and continue whisking until stiff peaks form.

Once the melted chocolate has cooled but is still pourable, gently fold it into the whipped cream using a spatula. Be careful not to deflate the cream.
