Ingredients

  • 200 grams Dark chocolate (70% cocoa or higher)
  • 300 ml Heavy cream
  • 3 Egg yolks
  • 50 grams Granulated sugar
  • 0.5 teaspoons Ground cardamom
  • 0.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Chili powder
  • 1 teaspoons Vanilla extract
  • 1 pinch Salt

Directions

Step 1

1. Chop the dark chocolate into small pieces and place it in a large heatproof bowl.

Step 2

2. In a small saucepan over medium heat, pour 150 ml of heavy cream and add the ground cardamom, ground cinnamon, and chili powder. Heat the cream until it just begins to simmer, but do not let it boil.

Step 3

3. Remove the cream from the heat and immediately pour it over the chopped chocolate. Allow it to sit for 2 minutes to melt the chocolate.

Step 4

4. Stir the chocolate and spiced cream mixture until smooth and glossy. Set aside to cool slightly.

Step 5

5. In a separate mixing bowl, whisk the egg yolks and granulated sugar together until pale and creamy. Gradually fold the egg mixture into the chocolate mixture until fully combined.

Step 6

6. In another clean bowl, whip the remaining 150 ml of heavy cream with the vanilla extract and a pinch of salt until soft peaks form.

Step 7

7. Gently fold the whipped cream into the chocolate mixture in two additions, being careful not to deflate the mousse.

Step 8

8. Divide the mousse evenly among four serving glasses or ramekins. Smooth the tops with the back of a spoon.

Step 9

9. Chill the mousse in the refrigerator for at least 2 hours, or until fully set.

Step 10

10. Serve the mousse cold, optionally garnished with a sprinkle of cinnamon or a few flakes of sea salt.
