Ingredients

  • 150 g Unsalted butter (melted)
  • 250 g Chocolate biscuits (crushed)
  • 300 g Powdered sugar (sifted)
  • 80 g Unsalted butter (softened)
  • 2 tsp Mint extract
  • 3 drops Green food coloring (optional)
  • 200 g Dark chocolate (chopped)
  • 2 tbsp Heavy cream

Directions

Step 1

Line a 9x9-inch square baking tin with parchment paper, leaving some overhang for easy removal later.

Step 2

In a large bowl, mix the crushed chocolate biscuits and melted butter until combined and the mixture resembles wet sand.

Step 3

Press the biscuit mixture firmly and evenly into the bottom of the prepared tin to form the base. Place it in the fridge to chill while preparing the mint layer.

Step 4

In another bowl, beat the softened butter until creamy. Gradually add the powdered sugar and continue beating until smooth.

Step 5

Mix in the mint extract and green food coloring (if using), adjusting both according to taste and desired intensity of color.

Step 6

Spread the mint mixture evenly over the chilled biscuit base using a spatula, smoothing out the surface. Return to the fridge for at least 10–15 minutes to set.

Melt the dark chocolate and heavy cream together in a heatproof bowl over a pan of simmering water (or microwave in short bursts, stirring in between) until smooth.

Pour the melted chocolate over the mint layer, tilting the tin to spread the chocolate evenly. Tap the tin lightly on the counter to remove any air bubbles.

Refrigerate the slice for at least 2 hours, or until completely set.

Once set, remove the slice from the tin using the parchment paper overhang and transfer it to a cutting board. Use a sharp knife to cut into even squares or rectangles. Serve chilled.
