  • 1 large Egg yolk
  • 0.5 teaspoons Mint extract
  • 0.5 cups Heavy cream
  • 4 ounces Semi-sweet chocolate, chopped
  • 2 tablespoons Unsalted butter, room temperature
  • 3 tablespoons Fresh mint leaves or crushed peppermint candies (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 12-cup tart or muffin tin and set it aside.

Step 2

In a medium bowl, whisk together the all-purpose flour, cocoa powder, granulated sugar, and salt.

Using a pastry cutter or your hands, cut the cold, cubed butter into the dry ingredients until the mixture resembles coarse crumbs.

Add the egg yolk and mint extract. Mix until the dough comes together. If it’s too dry, add 1 teaspoon of cold water at a time until the dough is cohesive but not sticky.
