Ingredients

  • 200 grams Dark chocolate (70% cocoa)
  • 100 grams Unsalted butter
  • 100 grams Granulated sugar
  • 3 pieces Eggs (large)
  • 200 milliliters Heavy cream
  • 100 grams Milk chocolate
  • 1 teaspoon Vanilla extract
  • 50 grams Hazelnuts (crushed)
  • 1 pinch Sea salt (flakes)
  • 1 tablespoon Cocoa powder

Directions

Step 1

Preheat your oven to 175°C (350°F) and grease a small baking tin (approximately 8-inch round).

Step 2

Melt the dark chocolate and butter together using a double boiler or microwave in 20-second intervals, stirring well between each interval, until fully smooth. Let it cool slightly.

Step 3

In a mixing bowl, whisk the sugar and eggs together until pale and fluffy, about 3-4 minutes.

Gradually fold the melted chocolate mixture into the egg mixture until combined.

Pour the batter into the prepared baking tin and bake for about 12-15 minutes, or until the edges are set but the center is still slightly soft. Let it cool completely in the tin.

For the chocolate mousse layer, melt the milk chocolate in a heatproof bowl over simmering water or in the microwave. Let it cool for 5 minutes.
