Ingredients

  • 150 grams Shredded unsweetened coconut
  • 200 grams Sweetened condensed milk
  • 30 grams Cocoa powder
  • 1 teaspoon Vanilla extract
  • 2 large Egg whites
  • 50 grams Granulated sugar
  • 100 grams Semi-sweet chocolate
  • 1 teaspoon Vegetable oil

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, cocoa powder, and vanilla extract. Mix until fully combined and set aside.

Step 3

In a separate clean, dry bowl, beat the egg whites using an electric mixer on medium speed until they become frothy.

Step 4

Gradually add the granulated sugar, one tablespoon at a time, and continue beating until stiff peaks form. This should take about 3-4 minutes.

Step 5

Gently fold the beaten egg whites into the coconut mixture a little at a time, being careful not to deflate the egg whites. Mix until fully incorporated.

Using a cookie scoop or a spoon, drop small mounds of the mixture (about 1 1/2 tablespoons each) onto the prepared baking sheet, spacing them about 1 inch apart.
