Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water
  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy cream
  • 2 sticks unsalted butter
  • 3 cups powdered sugar
  • 4 ounces dark chocolate, melted and slightly cooled
  • 2 tablespoons milk (for frosting)
  • 1 cup optional chocolate shavings or sprinkles

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans. Set aside.

Step 2

In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Step 3

In another bowl, beat the eggs lightly. Add the milk, vegetable oil, and vanilla extract and whisk until combined.

Step 4

Gradually add the wet ingredients to the dry ingredients, using a mixer on medium speed. Beat until smooth.

Step 5

Slowly stir in the boiling water. The batter will become thin—this is normal and helps create a moist cake.

Step 6

Divide the batter evenly between the prepared cake pans and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

Step 7

Cool the cakes in the pans for 10 minutes, then remove from the pans and let cool completely on wire racks.

Step 8

To make the ganache, heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and pour over the chocolate chips in a heat-safe bowl. Let sit for 5 minutes, then whisk until smooth. Let it cool to spreading consistency.

Step 9

For the frosting, use a mixer to beat the butter until light and fluffy. Gradually add the powdered sugar, melted chocolate, vanilla extract, and milk. Beat on medium-high speed until creamy and smooth.

Step 10

Assemble the cake by placing one layer on a cake stand or plate. Spread the ganache over the top, then place the second cake layer on top.

Step 11

Frost the top and sides of the cake with the chocolate frosting.

Step 12

Decorate with optional chocolate shavings or sprinkles.

Step 13

Chill the cake in the fridge for at least 30 minutes to set before serving. Enjoy!
