  • 2 cups All-purpose flour
  • 1.75 cups Granulated sugar, divided
  • 0.75 cups Unsweetened cocoa powder
  • 2.25 teaspoons Baking powder
  • 1 teaspoon Salt
  • 0.5 cups Vegetable oil
  • 7 Large egg yolks
  • 0.75 cups Water
  • 2 teaspoons Pure vanilla extract
  • 7 Large egg whites
  • 0.5 teaspoons Cream of tartar
  • 2 tablespoons Powdered sugar (optional, for garnish)

Directions

Step 1

Preheat your oven to 325°F (160°C). Ensure you have an ungreased 10-inch tube pan ready.

Step 2

In a large mixing bowl, whisk together the flour, 1 1/4 cups of granulated sugar, cocoa powder, baking powder, and salt until well combined.

Step 3

Make a well in the center of the dry ingredients. Add the vegetable oil, egg yolks, water, and vanilla extract. Mix until the batter is smooth and uniform. Set aside.

In another large bowl, use an electric mixer to beat the egg whites and cream of tartar on medium speed until soft peaks form.

Gradually add the remaining 1/2 cup of granulated sugar to the egg whites, a tablespoon at a time, while continuing to beat on high speed. Beat until stiff, glossy peaks form.
